Yield: 4 – 6 servings
Ingredients:
- 2 lbs. chicken, diced
- 1 large onion, diced
- 2 large tomatoes, diced
- 2 tbsp. of cooking oil
- 1 tsp. of curry powder
- 1 tsp. of chili paste (optional)
- 2 tbsp. of garlic paste
- 1 tbsp. of ginger paste
- 1 tsp. of salt
- 1 large potato, diced (optional)
Instructions:
- Preheat pot on medium heat and add oil
- Fry onions until golden brown
- Add garlic, ginger, chili paste, curry powder, salt, tomatoes
- Mix in meat and potatoes
- Cook for 10 minutes on medium heat or until water dries out
- Add half cup of water and let simmer for 10 minutes
- Enjoy with rice or tortillas!
