Fiji Chicken Curry

Yield: 4 – 6 servings

Ingredients:

  • 2 lbs. chicken, diced
  • 1 large onion, diced
  • 2 large tomatoes, diced
  • 2 tbsp. of cooking oil
  • 1 tsp. of curry powder
  • 1 tsp. of chili paste (optional)
  • 2 tbsp. of garlic paste
  • 1 tbsp. of ginger paste
  • 1 tsp. of salt
  • 1 large potato, diced (optional)

Instructions:

  1. Preheat pot on medium heat and add oil
  2. Fry onions until golden brown
  3. Add garlic, ginger, chili paste, curry powder, salt, tomatoes
  4. Mix in meat and potatoes
  5. Cook for 10 minutes on medium heat or until water dries out
  6. Add half cup of water and let simmer for 10 minutes
  7. Enjoy with rice or tortillas!
